Along with a beverage cooler an ice machine is a must. No matter what types of drinks are being served most people prefer ice unless they are drinking hot tea or coffee.

Coffee makers are also a very important product as not all guests will desire an alcoholic or soda drink.

Delivery bags for hot food are more important than you might think. Most catering companies prepare the food offsite at their restaurant instead of at the venue. If you are transporting enough food for 100 people in your van, you will want to ensure the food stays hot and fresh. The best way to do this is by purchasing quality delivery bags.

Once you have the food at the venue, you will need the proper serving dishes and utensils. Remember to keep hot foods covered and on a hot plate if at all possible to ensure that the food stays warm. For cold foods you should keep them refrigerated until you are ready to serve.

Displaying dishes and stands for desserts are also important. If you are going to serve more than one cake, you can easily do so by using stands that offer more than one tray. This way you could easily display more than one cake, cookies, brownies or other sweets according to the meal plan.

Dishes, utensils, cups, and glasses should be included in your necessary items. If you have a gig where the client stays there will be 100 guests, it is a good idea to come with at least enough food and dishware to accommodate 125 to 150 guests. This way guests will be able to have seconds if they want or if a few unexpected guests arrive, there will be enough food as well as dishes to accommodate the crowd.

This may not be equipment, but is a must if you want the event to be perfectly constructed and that is staff. You should have enough to serve and accommodate the guests without having one person in charge of the meat and the vegetables. It looks more professional and gives the guests a bit more time if you have one staff member serving at each table or section.
