Caramelized Bananas
This is a really simple healthy fruit dessert. All one has to do is slice the banana in half and add a small piece of margarine to a pan. Just leave the banana in the pan for a minute on either side. Serve with a drizzle of honey.
Apple-Walnut Crisp
6 cup apples
1 tsp nutmeg
2/3 cup unbleached flour
4 tbsp light margarine
1/2 cup brown sugar, packed
3 tbsp walnuts, chopped
2 tsp cinnamon
Preheat the oven to 375. Take a 8" square pan and sprinkle with cooking spray and flour. Arrange apples in the prepared pan and set aside. In a mixing bowl, put in flour, brown sugar, cinnamon, and nutmeg. Cut in margarine with a pastry blender until crumbly. Stir in walnuts. Sprinkle mixture evenly over apples. Bake for 30 minutes, till the apples get tender and the topping is crisp. This healthy fruit dessert has zero cholesterol!
Blueberry Cheesecake
Crust:
1 1/2 cup low-fat cracker crumbs
1/4 cup light softened margarine
3 tbsp granulated sugar
Filling:
16 oz fat-free softened cream cheese
1/2 cup granulated sugar
1/2 tsp pure vanilla extract
2 whole egg whites
2/3 cup blueberry pie filling
To make the crust, mix the crumbs, margarine, and sugar in a mixing bowl. Press this mixture firmly in a 9" pie pan. Chill for 1 hour until it gets firm. You can alternatively bake in a 375 oven for ten minutes until the edges turn brown. Cool on rack before filling. Preheat oven to 375.
To prepare the filling, mix the cream cheese, sugar, vanilla extract and egg whites together. Spread over the crust earlier made. Spread the blueberry pie filling on top. Bake for 40 minutes. Serve with the remaining blueberry pie filling.
